Sous Vide Egg Bites That Actually Work for Real Life

This is a simple sous vide egg bite method I come back to again and again. It uses just a handful of ingredients, comes together quickly, and reheats beautifully. No oven. No muffin tins. No chasing perfection.
Why Sous Vide Egg Bites?
Sous vide gives eggs a custard-like texture that’s hard to replicate any other way. They turn out smooth, rich, and spreadable instead of dry or rubbery.
And if you’re trying to add more protein to your mornings without overthinking breakfast, this is an easy win.
The Ingredients I Use
You don’t need much:
Eggs
Cottage cheese (equal parts egg and cottage cheese)
Gruyère or Swiss cheese
That’s it.
You can use heavy whipping cream, and it’s delicious, but I prefer cottage cheese blended with eggs. The texture is fantastic, and it adds a little extra protein without making things heavy.
A Few Practical Prep Notes
I use small ramekins or canning jars and spray them lightly with olive oil. It helps, but I’ll be honest. They still stick a bit. That’s just part of the deal. Knowing that upfront helps manage expectations.
I blend equal parts eggs and cottage cheese, and 1/2 teaspoon of salt until smooth. It should look creamy and uniform.
I use a scale to make sure I use the same amount of egg and cottage cheese. One jar per egg cracked.
And no, my kitchen counter doesn’t look like a magazine spread when I cook. This is very much real-life cooking. If that’s you, too, you’re in good company.
One tool I highly recommend is a canning funnel. It makes pouring the egg mixture into jars so much easier and keeps the mess to a minimum.
Once the jars are filled, I add about a tablespoon of Gruyère to each one. Sometimes a little more. Just make sure you wipe the rim clean so the lid seals properly.
Cooking and Cooling
After sealing the jars, they are placed in the sous vide bath at 185 degrees. I cook them for about 30 minutes.
Use tongs. The water is hot, and this is not the time to be brave.
Once they’re done, I let the jars rest on the counter for about 20 minutes. They’re very hot, and this short rest helps everything settle before refrigerating.
After that, they go into the fridge overnight.
Reheating and Serving
In the morning, I usually reheat one egg bite sous vide at 140 degrees for about 20 minutes. You can absolutely microwave them instead if that’s easier. No rules here.
I spread the egg bite on toast and skip the butter entirely. The texture is so creamy that it doesn’t need it.
If I have smoked salmon, I’ll add that. Sometimes sliced tomatoes. Sometimes nothing at all.
It’s simple, filling, and doesn’t feel like a compromise breakfast.
The Verdict
These egg bites come out smooth, custardy, and incredibly satisfying every single time. They’re easy to prep ahead, easy to reheat, and flexible enough to fit real mornings.
Honestly? These are the best eggs I make at home.
